Looking for an easy-peasy but super yummy pie? This is it.
To make this pie I bought some fresh pie and tart dough and covered a 12-inch (30 cm) pie pan with it.
For the filling I used a Martha Stuart recipe which can be found here:
http://www.marthastewart.com/1130962/fourth-july-summer-berry-pies
However, I just used half of the berry filling:
- 3 1/4 cups of blackberries
- 1/2 cup plus 1 tablespoons of granulated sugar
- 2 tablespoons of cornstarch
- 2 tablespoons fresh lemon juice (from 2 lemons)
- a pinch of Salt
I mixed all the ingredients together and put them into the pie shell. Then I covered the cake with dough in a lace pattern. From the remaining dough I cut out some mini fishes and attached them with a little bit of water. (*The cake was for a fisher man.*)
After one hour in the freezer I brushed some egg-wash onto the dough and baked my pie as directed at 375° F (190° C) for about 50 minutes total. After about 30 minutes in the oven I rotated my pie and covered the edges with aluminum foil to prevent burning.
